Bananas

Bananas are picked while their skin, or peel, is green if they are being shipped to other countries. A banana is ripe when its peel is bright yellow, and overripe when its peel turns brown. For this recipe, it’s okay to use bananas that are a bit overripe—it will make the dish sweeter.
